Description

This Crockpot French Onion Meatloaf with Melted Swiss Cheese combines caramelized onions, juicy ground beef, and a creamy Swiss cheese topping for a comforting, gourmet twist on a classic dish. Perfect for busy weeknights or cozy family dinners.


Ingredients

  • Ground Beef: 2 lbs (85% lean)
  • Breadcrumbs: 1 cup (Italian herb recommended)
  • Milk: 1/2 cup
  • Egg: 1
  • Onion Soup Mix: 1 packet
  • Onions: 3 large, sliced
  • Cooking Sherry: 1/4 cup
  • Worcestershire Sauce: 2 tbsp
  • Swiss Cheese Slices: 8 slices

Instructions

1.      Prepare the Onions:

    • Slice onions thinly.
    • Place them in the bottom of a 6-quart slow cooker.
    • Add cooking sherry and Worcestershire sauce, stirring gently to coat.

2.      Mix the Meatloaf:

    • In a large bowl, combine ground beef, breadcrumbs, milk, egg, and onion soup mix.
    • Mix gently with hands until just combined to avoid overmixing.
    • Shape into a loaf and place on top of the onions in the slow cooker.

3.      Cook the Meatloaf:

    • Cover and cook on LOW for 12 hours.
    • In the last 20–30 minutes, layer Swiss cheese slices on top, re-cover, and let melt.

4.      Serve:

 

    • Slice the meatloaf and serve with caramelized onions and juices from the slow cooker. Garnish with fresh thyme, if desired.

  • Ingredient Substitutions: Use ground turkey or chicken for a lighter version. Gluten-free breadcrumbs or rolled oats can replace regular breadcrumbs. Gruyère or provolone can substitute for Swiss cheese.
