Description
Raspberry bars are a buttery crumb crust layered with sweet-tart raspberry jam and topped with an oat-studded crumble. Perfect for afternoon tea, potlucks, or as a homemade treat. Easily made nut-free, gluten-free, or lower-sugar.
Ingredients
For the Crust and Topping:
– 2¾ cups flour (substitute gluten-free flour if needed)
– 2½ sticks unsalted butter, room temperature (substitute plant-based butter for vegan diets)
– 1 cup granulated sugar (substitute monk fruit or erythritol for low-sugar diets)
– ¼ cup brown sugar
– 1 egg
– 1 egg yolk
– 1 cup roasted unsalted pecans, finely chopped (substitute walnuts, almonds, or omit for nut-free diets)
– 1 tsp salt
For the Filling:
– 20 oz raspberry jam or preserves (about 2 cups)
For Added Texture:
– ⅔ cup rolled oats
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan or create a parchment sling for easy removal.
- In a mixing bowl, combine flour, butter, sugars, egg, egg yolk, pecans, and salt. Beat on low speed until crumbly. Reserve about 1½ cups of the mixture for the topping.
- Press the remaining mixture evenly into the prepared pan. Bake for 14 minutes.
- Add rolled oats to the reserved crumble mixture and use your fingers to work the oats into the crumble.
- Remove the crust from the oven and spread raspberry jam evenly over the baked crust. Scatter the oat crumble evenly over the jam.
- Return to the oven and bake for 25–30 minutes, or until the jam is bubbly and the crust is golden brown.
- Cool completely before slicing for neat bars, or serve warm with ice cream for a scoopable treat.
Notes
– Use high-quality jam: This ensures maximum flavor. Substitute fresh raspberries cooked down with sugar if preferred, but jam provides a consistent texture.
– Storage: Store leftovers in an airtight container at room temperature for up to 6 days. Freeze portions for longer storage; thaw at room temperature before serving. Avoid leaving bars at room temperature for extended periods.
– Customizations: Swap raspberry jam with strawberry, blueberry, or apricot preserves for variety. Sprinkle powdered sugar or drizzle melted chocolate on top for extra flair.
