Easy to make and endlessly customizable, this cobbler delivers maximum flavor with minimal effort a timeless treat that everyone will love.

Ingredients

Scale

For the Apple Filling:

  • 2 tablespoons unsalted butter
  • 8 cups peeled and sliced apples (about 7 medium apples; use a mix of tart and sweet varieties)
  • 3 tablespoons packed light or dark brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg

For the Topping:

  • 6 tablespoons melted unsalted butter
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Optional Add-Ins:

  • Chopped pecans, oats, or coarse sugar for texture
  • Vanilla ice cream or caramel sauce for serving

Instructions

  1. Preheat oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan.
  2. Prepare the filling: In a saucepan, melt butter over medium heat. Add sliced apples, brown sugar, lemon juice, flour, cinnamon, allspice, and nutmeg. Cook for 5 minutes, stirring occasionally, until apples begin to soften.
  3. Transfer the apple mixture to the prepared baking pan.
  4. Make the topping: In a large bowl, whisk together melted butter and sugar. Add buttermilk, vanilla, flour, baking powder, and salt; stir until just combined.
  5. Pour and spread the batter evenly over the apples. Optionally, sprinkle cinnamon-sugar on top.
  6. Use a knife to gently swirl the topping into the filling.
  7. Bake for 48–55 minutes, until the topping is golden brown and the filling is bubbling around the edges.
  8. Cover loosely with foil halfway through baking if the topping browns too quickly.
  9. Cool for at least 5 minutes before serving. Enjoy with vanilla ice cream or caramel drizzle if desired.

Notes

  • Use a mix of tart and sweet apples (like Granny Smith and Honeycrisp) for balanced flavor.
  • Avoid overmixing the batter for a light, fluffy topping.
  • Let the cobbler cool slightly before serving to help the filling set.
  • Store leftovers in the refrigerator for up to 5 days.
  • Freeze baked and cooled cobbler for up to 3 months; thaw overnight before reheating.
  • Reheat covered in a 300°F (149°C) oven for 20 minutes for best texture.
