Description

Easy baked pumpkin donuts are soft, spiced fall treats made with pumpkin purée and warm spices like cinnamon, nutmeg, and cloves. Baked instead of fried, they’re a healthier, cozy alternative to traditional donuts. Perfect for fall mornings, festive gatherings, or as a seasonal dessert, these donuts are simple to make and full of comforting flavor.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup pumpkin purée (canned, not pie filling)
  • 2 large eggs
  • ¼ cup melted butter (or oil)
  • ½ cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chocolate chips, chopped nuts, or sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan or line with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk pumpkin purée, eggs, melted butter, milk, and vanilla until smooth.
  4. Gradually fold wet ingredients into the dry mixture until just combined (do not overmix).
  5. Spoon or pipe the batter into the prepared donut pan, filling each cavity about ¾ full.
  6. Bake 10–12 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool slightly before glazing, dusting with sugar, or serving.

Notes

  • Use canned pumpkin purée, not pumpkin pie filling.
  • Avoid overmixing the batter for light, fluffy donuts.
  • Let donuts cool before glazing so it sets properly.
  • For a vegan version, use flax eggs, plant-based milk, and vegan butter.
  • Store in an airtight container at room temp for 2 days, refrigerated up to 5 days, or freeze up to 3 months.
