- 1 lb. of lean ground beef
- 1.5 cups of salsa
- 1 cup of frozen corn kernels
- 1 15-oz. can of black beans, drained
- 0.75 cups of mayonnaise
- 1 tablespoon of chili powder
- 2 cups of crumbled tortilla chips
- 2 cups of shredded cheddar cheese
Recommended Substitutions:
- Swap ground beef for turkey, chicken, or pork.
- Use different beans like kidney or pinto.
- Try nacho-flavored tortilla chips.
Optional Toppings:
- Green onions, cherry tomatoes, avocado, black olives, jalapeños, sour cream, cilantro, pico de gallo.
Instructions
- Brown the ground beef in a skillet, then add taco seasoning and salsa. Stir in black beans and sour cream.
- In a 9×13-inch baking dish, layer half of the beef mixture, top with cheese, and then tortilla chips.
- Repeat the layers with the remaining beef mixture, cheese, and chips.
- Bake at 400°F for 25-30 minutes or until the cheese is melted and bubbly.

- Can be made ahead and stored in the fridge or freezer.

- For a healthier option, use lean ground beef, whole wheat chips, or low-fat sour cream.
