Ingredients

  • 1 lb. of lean ground beef
  • 1.5 cups of salsa
  • 1 cup of frozen corn kernels
  • 1 15-oz. can of black beans, drained
  • 0.75 cups of mayonnaise
  • 1 tablespoon of chili powder
  • 2 cups of crumbled tortilla chips
  • 2 cups of shredded cheddar cheese

Recommended Substitutions:

  • Swap ground beef for turkey, chicken, or pork.
  • Use different beans like kidney or pinto.
  • Try nacho-flavored tortilla chips.

Optional Toppings:

 

  • Green onions, cherry tomatoes, avocado, black olives, jalapeños, sour cream, cilantro, pico de gallo.

Instructions

  1. Brown the ground beef in a skillet, then add taco seasoning and salsa. Stir in black beans and sour cream.
  2. In a 9×13-inch baking dish, layer half of the beef mixture, top with cheese, and then tortilla chips.
  3. Repeat the layers with the remaining beef mixture, cheese, and chips.
  4. Bake at 400°F for 25-30 minutes or until the cheese is melted and bubbly.
