Cottage Cheese Egg Bites are creamy, protein-packed mini egg muffins made with eggs, cottage cheese, shredded cheese, and vegetables.   • 1 cup cottage cheese

  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables (spinach, bell pepper, or zucchini)
  • ½ cup cooked turkey bacon or chicken sausage (optional)
  • Cooking spray or butter (for greasing)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or use a silicone muffin tray.
  2. In a blender, combine eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder. Blend until smooth.
  3. Stir in shredded cheese, chopped vegetables, and cooked turkey bacon or sausage (if using).
  4. Pour the mixture evenly into the muffin cups, filling each about ¾ full.
  5. Bake for 18–22 minutes, until tops are golden and centers are set.
  6. Allow to cool slightly before removing from the tin. Serve warm or store for later.
