Description
Feta and ricotta phyllo rolls are crispy phyllo pastry filled with creamy feta and ricotta cheese, served with spicy-sweet chili honey. Perfect for appetizers, parties, or as a homemade treat. Easily made vegetarian, gluten-free, or vegan.
Ingredients
For the Filling:
– 8 oz feta cheese, crumbled (substitute goat cheese or plant-based alternatives for vegan diets)
– 1 cup ricotta cheese (substitute mascarpone or plant-based ricotta for vegan diets)
– 1 tsp fresh thyme leaves (optional)
For the Rolls:
– 6 sheets phyllo pastry (cut in half lengthwise to make 12 strips, substitute gluten-free phyllo if needed)
– ¼ cup melted butter or olive oil (substitute plant-based butter or oil for vegan diets)
For the Chili Honey:
– ¼ cup honey (substitute maple syrup for vegan diets)
– ½ tsp red chili flakes (adjust to taste)
Instructions
- In a mixing bowl, combine crumbled feta, ricotta, and thyme until smooth and evenly mixed. Set aside.
- Cut phyllo sheets in half lengthwise to create 12 strips. Keep them covered with a damp towel to prevent drying.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place a strip of phyllo on a work surface, brush with melted butter or oil, and spoon about 1 tbsp of filling near one end. Fold the sides in and roll up tightly. Place seam-side down on the baking sheet.
- Repeat with remaining phyllo and filling. Brush the tops of the rolls with more butter or oil.
- Bake for 15–20 minutes, or until golden brown and crispy.
- While the rolls bake, warm honey in a small saucepan over low heat. Add chili flakes and stir for 1–2 minutes. Remove from heat.
- Drizzle warm chili honey over the baked rolls or serve on the side for dipping. Garnish with extra thyme if desired.
