Description

Ingredients

– 6 medium potatoes, peeled and diced

– 1 teaspoon dried marjoram

– Salt and black pepper, to taste

– Optional garnish: fresh parsley, sour cream, crusty rye bread


Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat.
  2. Add sliced sausage, onion, carrots, and celery. Cook for 5–7 minutes, until sausage is browned and vegetables soften.
  3. Stir in diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and simmer, covered, for 25 minutes, or until potatoes are fork-tender.
  5. Remove half of the soup and blend until smooth (use an immersion blender directly in the pot or a countertop blender). Return to the pot for a creamy-chunky texture.
  6. Stir in heavy cream, marjoram, salt, and pepper.
  7. Simmer gently for 10 more minutes to meld flavors (do not boil).
  8. Taste and adjust seasoning as needed.
  9. Ladle into bowls and garnish with fresh parsley or a dollop of sour cream. Serve with rye bread.
