Description
A rich, creamy soup featuring tender potatoes, smoky sausage, and aromatic vegetables simmered in savory broth inspired by traditional German comfort food. Perfect for chilly nights and easy to adapt for gluten-free, dairy-free, or vegetarian diets.
Ingredients
– 6 medium potatoes, peeled and diced
– 2 smoked sausages (e.g., kielbasa), sliced
– 1 medium onion, diced
– 2 carrots, sliced
– 2 celery stalks, sliced
– 4 cups chicken broth (or vegetable broth for vegetarian)
– 1 cup heavy cream (or coconut cream/cashew cream for dairy-free)
– 2 tablespoons unsalted butter (or olive oil for dairy-free)
– 1 teaspoon dried marjoram
– Salt and black pepper, to taste
– Optional garnish: fresh parsley, sour cream, crusty rye bread
Instructions
- In a large pot or Dutch oven, melt butter over medium heat.
- Add sliced sausage, onion, carrots, and celery. Cook for 5–7 minutes, until sausage is browned and vegetables soften.
- Stir in diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer, covered, for 25 minutes, or until potatoes are fork-tender.
- Remove half of the soup and blend until smooth (use an immersion blender directly in the pot or a countertop blender). Return to the pot for a creamy-chunky texture.
- Stir in heavy cream, marjoram, salt, and pepper.
- Simmer gently for 10 more minutes to meld flavors (do not boil).
- Taste and adjust seasoning as needed.
- Ladle into bowls and garnish with fresh parsley or a dollop of sour cream. Serve with rye bread.
Notes
– Vegetarian option: Use plant-based smoked sausage and vegetable broth.
– Gluten-free: Ensure sausage and broth are certified gluten-free.
– Dairy-free: Substitute butter with oil and heavy cream with full-fat coconut cream or blended cashew cream.
– Low-carb/keto: Replace potatoes with cauliflower florets (add in last 15 minutes of simmering).
– Freezing tip: Freeze without cream; stir in when reheating to preserve texture.
– Sausage shortcut: Use pre-cooked sausage add during the last 10 minutes of simmering.
