Ingredients
Scale
- 2 slices sourdough, whole grain, or brioche bread (or gluten-free alternative)
- ½ cup shredded sharp cheddar cheese
- ¼ cup grated Gruyere cheese
- ¼ cup shredded mozzarella cheese
- 1 handful fresh spinach
- 1 tbsp chopped sun-dried tomatoes
- 1–2 tbsp butter or mayonnaise (for spreading on bread)
- Optional: caramelized onions, garlic herb butter, or protein add-ins like turkey or bacon
Instructions
- Spread butter or mayonnaise on the outer side of each bread slice for crispiness.
- On the inside of one slice, layer the cheddar, Gruyere, and mozzarella evenly.
- Top with spinach and sun-dried tomatoes. Add optional toppings if desired.
- Place the other slice of bread on top to form the sandwich.
- Heat a skillet over medium heat and place the sandwich in the pan.
- Cook for 3–4 minutes per side, pressing gently, until golden brown and cheese is fully melted.
- Serve hot with your favorite side or dipping sauce.
Notes
- For extra crispness, use mayo instead of butter on the outside of the bread.
- Use gluten-free bread or plant-based cheese to suit dietary needs.
- Avoid flipping too often to maintain structure and even crust.
- Store leftovers wrapped in foil in the fridge for up to 2 days; reheat in a skillet.
- Not recommended for freezing due to texture changes.
- Add jalapeños, bacon, or alternative cheeses for fun flavor variations.
