Ingredients

  • 2 slices sourdough, whole grain, or brioche bread (or gluten-free alternative)
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup grated Gruyere cheese
  • ¼ cup shredded mozzarella cheese
  • 1 handful fresh spinach
  • 1 tbsp chopped sun-dried tomatoes
  • 12 tbsp butter or mayonnaise (for spreading on bread)
  • Optional: caramelized onions, garlic herb butter, or protein add-ins like turkey or bacon

Instructions

  1. Spread butter or mayonnaise on the outer side of each bread slice for crispiness.
  2. On the inside of one slice, layer the cheddar, Gruyere, and mozzarella evenly.
  3. Top with spinach and sun-dried tomatoes. Add optional toppings if desired.
  4. Place the other slice of bread on top to form the sandwich.
  5. Heat a skillet over medium heat and place the sandwich in the pan.
  6. Cook for 3–4 minutes per side, pressing gently, until golden brown and cheese is fully melted.
  7. Serve hot with your favorite side or dipping sauce.
