Description

Greek marinated chicken is a flavorful Mediterranean dish made with olive oil, lemon juice, garlic, and herbs, offering a juicy, zesty, and versatile meal that’s easy to prepare and packed with healthy, vibrant taste.


Ingredients

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp dried rosemary
  • Black pepper, to taste
  • Optional: 1 tsp paprika, ½ tsp cumin, chili flakes (to taste), 1 tsp honey, 1 tsp mustard
  • Chicken (breasts or thighs, bone-in or boneless)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, rosemary, and black pepper.
  2. Add optional ingredients if using: paprika, cumin, chili flakes, honey, or mustard.
  3. Place chicken in a zip-top bag or container and pour the marinade over it. Seal and refrigerate.
  4. Marinate for at least 2–4 hours, or overnight for deeper flavor.
  5. Grill, bake, pan-sear, or broil the chicken until fully cooked (internal temp 165°F/75°C).
  6. Serve garnished with lemon wedges, parsley, or crumbled feta.

Notes

  • Marinate for at least 30 minutes if short on time.
  • Use thighs for juicier results, but breasts also work.
  • Freeze marinated chicken in an airtight bag for up to 3 months.
  • Substitute red wine vinegar with apple cider or white wine vinegar.
  • Ensure spices and sauces are gluten-free if needed.

Use a meat thermometer to avoid overcooking.
