- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 3 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp dried rosemary
- Black pepper, to taste
- Optional: 1 tsp paprika, ½ tsp cumin, chili flakes (to taste), 1 tsp honey, 1 tsp mustard
- Chicken (breasts or thighs, bone-in or boneless)
Instructions
- In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, rosemary, and black pepper.
- Add optional ingredients if using: paprika, cumin, chili flakes, honey, or mustard.
- Place chicken in a zip-top bag or container and pour the marinade over it. Seal and refrigerate.
- Marinate for at least 2–4 hours, or overnight for deeper flavor.
- Grill, bake, pan-sear, or broil the chicken until fully cooked (internal temp 165°F/75°C).
- Serve garnished with lemon wedges, parsley, or crumbled feta.
Notes
- Marinate for at least 30 minutes if short on time.
- Use thighs for juicier results, but breasts also work.
- Freeze marinated chicken in an airtight bag for up to 3 months.
- Substitute red wine vinegar with apple cider or white wine vinegar.
- Ensure spices and sauces are gluten-free if needed.
