Description

Greek roasted garlic spinach white pizza is a creamy, cheesy pizza topped with roasted garlic, sautéed spinach, and a trio of cheeses : ricotta, mozzarella, and feta, creating a Mediterranean-inspired dish that is rich, flavorful, and satisfying.   • 1 pre-made pizza crust (store-bought or homemade)
  • 1 cup fresh spinach, chopped
  • 1 medium head of garlic
  • 2 tablespoons olive oil (1 tbsp for roasting garlic, 1 tbsp for sautéing spinach)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice off the top of the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized.
  3. Let garlic cool, squeeze cloves out, and mash in a bowl.
  4. Heat remaining olive oil in a skillet over medium heat. Sauté chopped spinach for 2–3 minutes until wilted; season with salt and pepper.
  5. Combine mashed roasted garlic with ricotta cheese, half the mozzarella, dried oregano, salt, and pepper. Mix until smooth.
  6. Spread ricotta mixture over pizza crust.
  7. Top with sautéed spinach, remaining mozzarella, and crumbled feta. Add crushed red pepper flakes if desired.
  8. Bake 15–20 minutes until crust is golden and cheese is bubbly.
  9. Let cool a few minutes, then garnish with fresh basil, slice, and serve.
