- 1 cup fresh spinach, chopped
- 1 medium head of garlic

- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice off the top of the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized.
- Let garlic cool, squeeze cloves out, and mash in a bowl.
- Heat remaining olive oil in a skillet over medium heat. Sauté chopped spinach for 2–3 minutes until wilted; season with salt and pepper.
- Combine mashed roasted garlic with ricotta cheese, half the mozzarella, dried oregano, salt, and pepper. Mix until smooth.
- Spread ricotta mixture over pizza crust.
- Top with sautéed spinach, remaining mozzarella, and crumbled feta. Add crushed red pepper flakes if desired.
- Bake 15–20 minutes until crust is golden and cheese is bubbly.
- Let cool a few minutes, then garnish with fresh basil, slice, and serve.
