Main Ingredients:
- 1 lb Ground Beef (lean or extra-lean)
- 4 medium Potatoes (peeled and diced; Russet or Yukon Gold)
- 1 small Onion (diced)
- 2 large Carrots (diced)
- 2 stalks Celery (chopped)
- 3 cloves Garlic (minced)
Liquid & Seasoning:
- 4 cups Beef Broth
- 2 cups Milk
- 2 cups Cheddar Cheese (shredded)
- 2 tbsp Butter
- 2 tbsp Flour
- Salt & Pepper (to taste)
- 1 tsp Paprika
Instructions
- Cook the Ground Beef
- In a Dutch oven or soup pot, heat 1 tbsp butter over medium-high heat.
- Add the ground beef, cook until browned, breaking it up with a spoon.
- Drain excess fat and set aside.
- Sauté the Vegetables
- In the same pot, melt the remaining butter.
- Add onions, carrots, celery, and garlic; cook until softened (about 5 minutes).
- Add Potatoes & Broth
- Stir in diced potatoes and pour in beef broth.
- Bring to a boil, then lower heat and simmer for 15-20 minutes, or until potatoes are fork-tender.
- Thicken the Soup
- Sprinkle in flour, stirring well to avoid lumps.
- Slowly add milk, stirring constantly.
- Melt in the Cheese
- Reduce heat to low and stir in cheddar cheese until fully melted.
- Season with salt, black pepper, and paprika.
- Serve & Enjoy

- For extra thickness: Mash some potatoes before adding cheese.
