Main Ingredients:

  • 1 lb Ground Beef (lean or extra-lean)
  • 4 medium Potatoes (peeled and diced; Russet or Yukon Gold)
  • 1 small Onion (diced)
  • 2 large Carrots (diced)
  • 2 stalks Celery (chopped)
  • 3 cloves Garlic (minced)

Liquid & Seasoning:

  • 4 cups Beef Broth
  • 2 cups Milk
  • 2 cups Cheddar Cheese (shredded)
  • 2 tbsp Butter
  • 2 tbsp Flour
  • Salt & Pepper (to taste)
  • 1 tsp Paprika

Instructions

  1. Cook the Ground Beef
    • In a Dutch oven or soup pot, heat 1 tbsp butter over medium-high heat.
    • Add the ground beef, cook until browned, breaking it up with a spoon.
    • Drain excess fat and set aside.
  2. Sauté the Vegetables
    • In the same pot, melt the remaining butter.
    • Add onions, carrots, celery, and garlic; cook until softened (about 5 minutes).
  3. Add Potatoes & Broth
    • Stir in diced potatoes and pour in beef broth.
    • Bring to a boil, then lower heat and simmer for 15-20 minutes, or until potatoes are fork-tender.
  4. Thicken the Soup
    • Sprinkle in flour, stirring well to avoid lumps.
    • Slowly add milk, stirring constantly.
  5. Melt in the Cheese
    • Reduce heat to low and stir in cheddar cheese until fully melted.
    • Season with salt, black pepper, and paprika.
  6. Serve & Enjoy
    • Ladle into bowls, garnish with parsley or extra cheese, and enjoy!

Notes

  • For extra thickness: Mash some potatoes before adding cheese.
  • Use heavy cream instead of milk for a richer texture.
