Description

Italian herb and cheese bread Subway is a soft, chewy bread infused with aromatic Italian herbs and melted cheese, inspired by the iconic Subway sandwich rolls. Perfect for sandwiches, appetizers, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.


Ingredients

For the Dough:

– 3 cups warm water

– 4 tbsp active dry yeast (substitute instant yeast, reducing rising time accordingly)

– ¼ cup granulated sugar

– ⅓ cup oil (substitute plant-based oil for vegan diets)

– 1 tbsp salt

– 2 large eggs (substitute flax eggs for vegan diets)

– ⅓ cup instant mashed potato flakes (optional, omit if needed)

– 7½ cups bread flour (substitute gluten-free flour if needed)

For the Italian Herb Seasoning:

– 1 tbsp oregano

– 2 tbsp garlic powder

– 1 tbsp dried parsley

– 2 tbsp grated parmesan cheese (substitute nutritional yeast for vegan diets)

For Topping:

– 1 cup finely grated Colby Jack cheese (substitute cheddar, mozzarella, or vegan cheese as desired)


Instructions

  1. In the bowl of a stand mixer, whisk together yeast and warm water. Add sugar, oil, salt, eggs, and mashed potato flakes (if using).
  2. Gradually add bread flour and knead on low speed for 6 minutes. Rest the dough for 10 minutes.
  3. Transfer dough onto a floured surface and cut into 8 equal pieces. Gently pat and roll each piece into a 12-inch log.
  4. Spray the tops with water and dredge into the Italian herb blend.
  5. Place rolls onto silicone sub roll mats and score the tops (3–4 slashes). Allow dough to rise until tripled in size (up to 1 hour in a warm place).
  6. Preheat oven to 375°F (190°C). Sprinkle the tops with shredded Colby Jack cheese and bake for 15–18 minutes.
  7. Cool in molds before removing.

Notes

– Use fresh herbs for maximum flavor and aroma. Substitute plant-based ingredients for vegan diets.

– Store bread in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Freeze slices for longer storage; thaw overnight in the fridge before serving. Avoid microwaving if possible.
