Description

Keto low carb flatbread is a gluten-free, grain-free alternative to traditional bread perfect for wraps, sandwiches, pizzas, and more. With a chewy, satisfying texture and just a handful of low-carb ingredients like almond flour and melted cheese, it’s a must-have for keto-friendly meal prep.

Ingredients

Scale
  • 1 ½ cups almond flour
  • 1 cup shredded mozzarella cheese, melted
  • 1 large egg
  • 1 tsp Italian seasoning
  • Optional: garlic powder, coconut flour, psyllium husk, sesame seeds
  • Optional for flavor: cream cheese, rosemary, paprika, cumin
  • Optional toppings or fillings: marinara, fresh veggies, grilled meats, avocado, hummus, sugar-free spreads

Instructions

  1. Preheat oven to 400°F (200°C) if baking.
  2. In a mixing bowl, combine almond flour, melted mozzarella, egg, and Italian seasoning. Mix until a dough forms.
  3. Roll or press dough into thin, even circles on parchment-lined surface. Use wet hands to shape and smooth.
  4. Cook flatbread using one of the following methods:
    • Bake in oven for 8–10 minutes
    • Pan-fry over medium heat
    • Combination: Bake then briefly pan-fry for extra crispness
  5. Optional: Brush with olive oil and sprinkle with parsley, sesame seeds, or herbs.
  6. Let cool slightly and use as desired for wraps, sandwiches, or pizza bases.

Notes

  • Psyllium husk helps with elasticity.
  • Avoid overmixing to keep the texture tender.
  • Use parchment to prevent sticking.
  • Store leftovers in fridge for 3 days or freeze up to 2 months.
  • Reheat in skillet or toaster for best results.
  • Swap almond flour with coconut or sunflower flour (adjust ratio).
  • Use flax egg and vegan cheese for dairy-free or vegan version.
  • Great base for savory or sweet applications.
