- 1 cup buttermilk

Instructions
- Prepare the wedges: Rinse and pat dry potato wedges. Pre-cook by steaming or boiling for 5 minutes, then cool.
- Make the seasoning mix: In a bowl, mix flour, paprika, garlic powder, onion powder, thyme, cayenne, black pepper, and salt.
- Coat the wedges: Dip each wedge in buttermilk, then dredge in the seasoning mix to coat evenly.
- Double-breading: Repeat the buttermilk and seasoning coating for a thicker crust.
- Fry: Heat oil in a deep fryer or skillet to 375°F (190°C). Fry wedges in batches until golden and crispy, about 5–7 minutes.
Drain and serve: Remove wedges, drain on paper towels, and serve hot with your favorite dipping sauces.
