  • 1 lb sauerkraut, drained

  • 1 tbsp vegetable oil
  • 2 tbsp light brown sugar
  • 1 tbsp mustard (spicy brown, whole grain, or Dijon)
  • Freshly ground black pepper, to taste

Optional Add-ins:

  • ½ red onion, thinly sliced
  • Fresh thyme or parsley, for garnish

Creamy Avocado Sauce:

  • 1 ripe avocado
  • ¼ cup Greek yogurt
  • 1 tbsp lime juice
  • 1 small garlic clove
  • Salt and pepper, to taste
  • Handful of fresh cilantro

Instructions

  1. Slice red onion (if using), drain sauerkraut, and cut kielbasa into ½-inch rounds.
  2. Heat butter and oil in a large skillet over medium heat until melted.
  3. Add kielbasa and cook 3 minutes per side or until browned. Remove and set aside.
  4. In the same skillet, add sauerkraut, red onion (if using), brown sugar, and mustard. Stir constantly for 5–8 minutes until softened and heated through.
  5. Return kielbasa to the skillet and toss to combine. Season with black pepper.
  6. Garnish with thyme or parsley if desired.

To make the avocado sauce:
7. Blend avocado, yogurt, lime juice, garlic, cilantro, salt, and pepper until smooth.
8. Serve sauce drizzled over the kielbasa or on the side for dipping.
