Description

Lasagna soup is a hearty one-pot meal that combines all the flavors of classic lasagna rich tomato sauce, savory ground beef, creamy ricotta, and melted mozzarella into a warm and comforting bowl. Perfect for busy weeknights or cozy dinners, this dish is easy to make, customizable, and full of bold Italian flavors.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Optional Add-Ins:

  • Spinach
  • Zucchini
  • Mushrooms

Instructions

  1. In a large pot or Dutch oven, brown ground beef over medium heat; drain excess fat.
  2. Add diced onion and garlic, sauté until softened.
  3. Stir in crushed tomatoes, beef broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat to a simmer.
  5. Add broken lasagna noodles and cook 8–10 minutes, stirring occasionally, until tender.
  6. Ladle soup into bowls, top each with a dollop of ricotta and a sprinkle of mozzarella.
  7. Serve warm and enjoy.

Notes

  • Use high-quality canned tomatoes for best flavor.
  • Simmer longer for deeper flavor.
  • Let soup rest 5–10 minutes before serving to allow flavors to meld.
  • Vegetarian option: use lentils or plant-based crumbles instead of beef.
  • For a low-carb version, replace noodles with zucchini noodles or spaghetti squash.
