Lazy Chocolate Chip Cookies

  • Author: Leslie Bennett
  • Total Time: 35 minutes
  • Yield: 9–12 cookies

Description

Lazy chocolate chip cookies are a simplified version of classic chocolate chip cookies made with just a few ingredients, including yellow cake mix. Perfect for last-minute desserts, family gatherings, or as a homemade treat. Easily made gluten-free, dairy-free, or vegan.

Ingredients

For the Cookies:

– ½ cup butter (substitute margarine or coconut oil if needed)

– 2 eggs

– 1 box yellow cake mix (substitute gluten-free or sugar-free cake mix if needed)

– 12 oz semi-sweet chocolate chips (substitute dark chocolate, white chocolate, or peanut butter chips for variety)

For Serving (Optional):

– Cold milk or a scoop of ice cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8″x8″ square pan with non-stick spray.
  2. Melt the butter and mix it with eggs until combined.
  3. Add the yellow cake mix and stir until fully incorporated.
  4. Pour in the entire bag of semi-sweet chocolate chips and mix all ingredients together.
  5. Press the cookie dough evenly into the prepared baking dish.
  6. Bake for 20–25 minutes, or until the top is golden brown.
  7. Let the cookies cool completely before cutting them into squares. The longer they cool, the better they hold their shape.
  8. Enjoy with a cold glass of milk or a scoop of ice cream.

Notes

– Use high-quality chocolate chips: This ensures maximum flavor. Substitute plant-based butter and eggs for vegan diets.

– Storage: Store leftovers in an airtight container at room temperature for up to 5 days. Freeze portions for longer storage; thaw at room temperature before serving. Avoid microwaving if possible.

– Customizations: Swap semi-sweet chocolate chips with dark chocolate, white chocolate, or peanut butter chips. Stir in chopped nuts, sprinkles, or dried fruit for added complexity.
