Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in lemon zest, lemon juice, and vanilla extract.
  4. Gradually add flour, cornstarch, and salt; mix until a soft dough forms.
  5. Roll dough into 1-inch balls and place on the prepared baking sheet.
  6. Bake for 10–12 minutes, or until set but not browned.
  7. Let cookies cool slightly, then roll in powdered sugar while still warm.
  8. Once fully cooled, roll again in powdered sugar for a snowy finish.
