- In a small bowl, whisk together Dijon mustard, brown sugar, orange juice, soy sauce, fish sauce, ginger, garlic, and red pepper flakes until smooth.
- Place London broil in a gallon-sized zip-top bag or shallow dish. Pour marinade over meat, ensuring full coverage.
- Seal bag (or cover dish) and refrigerate for at least 3 hours or up to 24 hours.
- When ready to cook, preheat broiler to 500°F (260°C). Place a cast-iron skillet on the top oven rack to heat.
- Carefully place marinated steak in the hot skillet. Broil for 4 minutes per side (8 minutes total) for medium-rare.
- Transfer to a cutting board and let rest for 5–10 minutes.
