Description

London broil marinade is a bold, flavor-packed blend of Dijon mustard, brown sugar, citrus, garlic, and umami-rich sauces that tenderizes and transforms tough cuts into juicy, restaurant-quality steak perfect for weeknight dinners or weekend grilling. Easily made gluten-free or low-sodium.

  1. Score the meat: On a cutting board, use a sharp knife to make ¼-inch-deep cuts ¾ inch apart in a crisscross pattern on both sides of the steak.
  2. In a small bowl, whisk together Dijon mustard, brown sugar, orange juice, soy sauce, fish sauce, ginger, garlic, and red pepper flakes until smooth.
  3. Place London broil in a gallon-sized zip-top bag or shallow dish. Pour marinade over meat, ensuring full coverage.
  4. Seal bag (or cover dish) and refrigerate for at least 3 hours or up to 24 hours.
  5. When ready to cook, preheat broiler to 500°F (260°C). Place a cast-iron skillet on the top oven rack to heat.
  6. Carefully place marinated steak in the hot skillet. Broil for 4 minutes per side (8 minutes total) for medium-rare.
  7. Transfer to a cutting board and let rest for 5–10 minutes.
  8. Slice thinly against the grain and serve warm.
