Description

  • 1 tbsp milk or cream (adjust for consistency)

  1. Preheat & Prepare: Preheat oven to 325°F (165°C). Grease and flour a loaf pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter & Sugar: Beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each.
  4. Incorporate Wet Ingredients: Mix in lemon zest, lemon juice, vanilla, and almond extract.
  5. Combine with Dry Ingredients: Alternately add dry ingredients and milk, beginning and ending with the dry ingredients.
  6. Fold in Blueberries: Toss blueberries in 1 tbsp flour, then gently fold them into the batter.
  7. Bake: Pour batter into prepared loaf pan, smooth the top, and bake for 60-75 minutes. A toothpick should come out clean when done.
  8. Cool: Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack.
  9. Prepare Glaze: Whisk together powdered sugar, lemon juice, and milk. Drizzle over the cooled cake.
  10. Serve & Enjoy: Slice and serve with coffee, tea, or a refreshing drink.
