- 250 g dried pasta
- 650 ml chicken stock
- 150 ml double cream
- 50 g grated Parmesan cheese
- 120 g fresh spinach
- Salt and freshly ground black pepper, to taste

Instructions
- Heat olive oil in a large, deep frying pan over medium heat.
- Add chicken pieces and a pinch of pepper. Cook for 5 minutes, stirring occasionally, until browned.
- Stir in garlic, sun-dried tomatoes, oregano, and paprika. Cook for 3–5 minutes until fragrant.
- Add dried pasta and chicken stock. Stir to combine, then cover with a lid.
- Cook for 15–20 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
- Lower heat to the minimum, add spinach and cream, and stir until spinach wilts and the sauce thickens (1–3 minutes).
- Check the chicken is fully cooked, season with salt and pepper, then stir in grated Parmesan.
- Serve warm with extra Parmesan or fresh herbs if desired.
