- 5 tbsp cornstarch
- ½ cup flour
- 300ml milk
- ½ tsp black pepper
- 2 tbsp fresh parsley (chopped)
- 1 small pepper (diced, optional)
- Vegetable oil (for frying)
Instructions
Boil the Potatoes:
- Fill a pot with water, add salt, and boil potatoes until tender.
- Drain and mash thoroughly until smooth.
- Prepare the Cheese Sauce:
- Melt butter in a pan over low heat.
- Add flour gradually, stirring constantly to form a roux.
- Slowly pour in milk, whisking to avoid lumps.
- Season with salt, black pepper, and half of the grated cheese.
- Let the sauce cool completely.
- Mix the Dough:
- In a large bowl, combine mashed potatoes, cooled sauce, remaining cheese, cornstarch, parsley, garlic, and onions.
- Mix until fully incorporated.
- Refrigerate for 20 minutes to firm up.
- Shape and Fry the Fritters:
- Shape the chilled dough into small balls or strips.
- Heat vegetable oil in a skillet over medium-high heat.
- Fry in batches, turning occasionally, until golden brown.
- Drain on paper towels and serve hot.
