  • 2 boneless, skin-on chicken breasts
  • ½ cup fresh or shredded mozzarella cheese
  • ⅓ cup sun-dried tomatoes (oil-packed or rehydrated)
  • 1 clove garlic, minced
  • 1 tbsp fresh basil (or 1 tsp dried)
  • ½ tsp dried oregano
  • ½ tsp thyme
  • Salt and pepper, to taste
  • 1 tbsp olive oil or melted butter
  • Optional: Lemon zest, red pepper flakes, balsamic glaze

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken breasts dry and carefully loosen the skin without tearing it.
  3. In a bowl, mix mozzarella, chopped sun-dried tomatoes, garlic, basil, oregano, thyme, salt, and pepper.
  4. Stuff the mixture under the loosened skin of each chicken breast. Secure with toothpicks if needed.
  5. Brush the chicken skin with olive oil or melted butter for a crispy finish.
  6. Place the stuffed chicken on a lined baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving. Garnish with fresh basil or balsamic glaze if desired.
