Description

Ingredients

– ½ cup (1 stick) unsalted butter

– 2 cups granulated sugar

– ½ cup creamy peanut butter (stirred smooth)

– 2 teaspoons vanilla extract

– ¼ teaspoon fine sea salt

– 3 cups quick-cooking oats (not steel-cut)


Instructions

  1. Line two baking sheets with parchment paper or silicone mats; set aside.
  2. In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
  3. Stir occasionally until butter melts and sugar dissolves.
  4. Bring mixture to a full rolling boil, then cook for exactly 1 minute, stirring frequently to prevent scorching.
  5. Remove from heat and immediately stir in peanut butter, vanilla, and salt until smooth and glossy.
  6. Add oats and fold until evenly coated and mixture thickens.
  7. Using a cookie scoop or heaping tablespoon, drop mounds onto prepared baking sheets.
  8. Let stand at room temperature for 20–30 minutes to set (or refrigerate to speed up).
