Description

Decadent, chewy no bake macaroons made with melted caramel, sweetened coconut, and chocolate finished with a sprinkle of flaky sea salt. Naturally gluten-free, easily adaptable to vegan or low-sugar diets, and ready in under 30 minutes with zero oven time.


Ingredients

– 11 oz soft caramel candies, unwrapped

– ¼ cup heavy whipping cream

– 3 cups sweetened shredded coconut

– 8 oz semi-sweet chocolate, chopped or chips

– 1 teaspoon neutral oil or vegetable shortening (optional, for smoother chocolate)

– Flaky sea salt, for sprinkling


Instructions

  1. Line a baking sheet with parchment paper or a silicone mat; set aside.
  2. In a medium saucepan over low heat, melt caramel candies with heavy cream, stirring frequently, until smooth and glossy. Do not boil.
  3. Remove from heat and immediately fold in shredded coconut until evenly coated.
  4. Using a small cookie scoop or heaping tablespoon, portion the mixture into mounds on the prepared sheet. Gently compact if needed.
  5. Refrigerate for 20–30 minutes, or until firm enough to handle.
  6. In a microwave-safe bowl, combine chocolate and oil (if using). Melt in 20–30 second bursts, stirring between each, until smooth. (Alternatively, use a double boiler.)
  7. Dip the bottom of each chilled macaroon into melted chocolate, letting excess drip off, and place back on the lined sheet.
  8. Drizzle remaining chocolate over the tops.
  9. While chocolate is still wet, sprinkle lightly with flaky sea salt.
  10. Chill for 10–15 minutes more, or until chocolate is fully set.

Notes

– For deeper flavor, toast half the coconut before mixing.

– Use dairy-free caramels, coconut cream, and vegan chocolate for a vegan version.

– Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.

– Let sit at room temperature 5–10 minutes before serving for a softer texture.
