Description
Decadent, chewy no bake macaroons made with melted caramel, sweetened coconut, and chocolate finished with a sprinkle of flaky sea salt. Naturally gluten-free, easily adaptable to vegan or low-sugar diets, and ready in under 30 minutes with zero oven time.
Ingredients
– 11 oz soft caramel candies, unwrapped
– ¼ cup heavy whipping cream
– 3 cups sweetened shredded coconut
– 8 oz semi-sweet chocolate, chopped or chips
– 1 teaspoon neutral oil or vegetable shortening (optional, for smoother chocolate)
– Flaky sea salt, for sprinkling
Instructions
- Line a baking sheet with parchment paper or a silicone mat; set aside.
- In a medium saucepan over low heat, melt caramel candies with heavy cream, stirring frequently, until smooth and glossy. Do not boil.
- Remove from heat and immediately fold in shredded coconut until evenly coated.
- Using a small cookie scoop or heaping tablespoon, portion the mixture into mounds on the prepared sheet. Gently compact if needed.
- Refrigerate for 20–30 minutes, or until firm enough to handle.
- In a microwave-safe bowl, combine chocolate and oil (if using). Melt in 20–30 second bursts, stirring between each, until smooth. (Alternatively, use a double boiler.)
- Dip the bottom of each chilled macaroon into melted chocolate, letting excess drip off, and place back on the lined sheet.
- Drizzle remaining chocolate over the tops.
- While chocolate is still wet, sprinkle lightly with flaky sea salt.
- Chill for 10–15 minutes more, or until chocolate is fully set.
Notes
– For deeper flavor, toast half the coconut before mixing.
– Use dairy-free caramels, coconut cream, and vegan chocolate for a vegan version.
– Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
– Let sit at room temperature 5–10 minutes before serving for a softer texture.
