- 3 lbs (1.3 kg) chicken wings, separated at joints, tips discarded
- 1 cup (250 g) ketchup
- ½ cup (100 g) brown sugar, lightly packed
- 1 tbsp apple cider vinegar
- 1 tbsp Sriracha chili sauce
- 1 tsp light soy sauce
- ½ tsp ground cumin
Optional Add-ins:
- Garlic powder
- Smoked paprika
- Honey
Instructions
- Preheat oven to 400°F (204°C). Line a large-rimmed baking sheet with foil and place a wire rack on top. Spray the rack with nonstick spray.
- In a saucepan over medium heat, combine ketchup, brown sugar, vinegar, Sriracha, soy sauce, and cumin. Cook for 2–3 minutes, stirring until sugar dissolves. Adjust seasoning if needed.
- Divide sauce in half. Reserve one portion for serving.
- Toss chicken wings with the remaining sauce and arrange on prepared rack.
- Bake for 35–45 minutes, turning once, until cooked through and golden. Internal temp should reach 165°F (74°C).
- Serve with reserved sauce or toss cooked wings in it before serving.
Notes
- No wire rack? Place wings directly on a parchment-lined baking sheet and rotate 2–3 times during baking.
- For spicier wings, increase Sriracha or add red pepper flakes.
- Swap soy sauce with tamari for a gluten-free version.
- For crispier wings, broil for 2–3 minutes at the end.
- Vegan variation: use cauliflower florets or tofu chunks.
