- Phyllo dough (or puff pastry)
- 1 block feta cheese, cut into bite-sized strips or cubes
- 1 egg
- 1 tablespoon water (for egg wash)

- Optional herbs & spices: thyme, oregano, garlic powder, black pepper
- For the chili honey sauce:
- 3 tablespoons honey
- 1 teaspoon red chili flakes
- 1 teaspoon fresh lemon juice
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut feta into small strips or cubes.
- Lay out a sheet of phyllo dough and brush lightly with egg wash.
- Place a piece of feta in the center and roll tightly. Seal edges with egg wash.
- Repeat with remaining dough and cheese.
- Place rolls on the baking sheet. Bake for 15–20 minutes, flipping halfway, until golden and crispy.
- While baking, prepare chili honey sauce: Combine honey, chili flakes, and lemon juice in a small saucepan. Warm gently until well mixed.
- Drizzle chili honey over baked rolls and serve immediately.
