Ingredients

Scale
  • For the rolls:
    • Phyllo dough (or puff pastry)
    • 1 block feta cheese, cut into bite-sized strips or cubes
    • 1 egg
    • 1 tablespoon water (for egg wash)
    • Optional: spinach, sun-dried tomatoes, roasted red peppers
    • Optional herbs & spices: thyme, oregano, garlic powder, black pepper
  • For the chili honey sauce:
    • 3 tablespoons honey
    • 1 teaspoon red chili flakes
    • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut feta into small strips or cubes.
  3. Lay out a sheet of phyllo dough and brush lightly with egg wash.
  4. Place a piece of feta in the center and roll tightly. Seal edges with egg wash.
  5. Repeat with remaining dough and cheese.
  6. Place rolls on the baking sheet. Bake for 15–20 minutes, flipping halfway, until golden and crispy.
  7. While baking, prepare chili honey sauce: Combine honey, chili flakes, and lemon juice in a small saucepan. Warm gently until well mixed.
  8. Drizzle chili honey over baked rolls and serve immediately.

Notes

  • Keep phyllo covered with a damp towel while working to prevent drying.
  • Use gluten-free dough and dairy-free cheese for dietary alternatives.
  • Do not overfill to avoid bursting during baking.
  • Store leftovers in the fridge for up to 3 days or freeze before baking for up to 1 month.
  • Reheat baked or frozen rolls in the oven avoid microwaving.
