Instructions
- In a large mixing bowl, cream together softened peanut butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Gradually incorporate flour and baking soda until fully combined. Cover and chill the dough for at least 30 minutes.
- Melt the milk chocolate using a double boiler or microwave, then scoop small portions onto parchment paper and refrigerate until firm.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Take a tablespoon of chilled dough, flatten it, place a chocolate center in the middle, and wrap the dough around it, sealing the edges.
- Arrange cookies on the baking sheet, spaced apart, and bake for 12-15 minutes or until golden around the edges.
- Let cookies cool for a few minutes on the baking sheet before transferring to a wire rack.
