Instructions

  1. Preheat & Prepare Pans: Preheat oven to 350°F (175°C). Grease and line two round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk eggs, melted butter, vanilla extract, and milk.
  4. Combine & Fold: Gradually mix dry ingredients into wet ingredients until just combined. Gently fold in crushed pineapple and shredded coconut.
  5. Bake: Divide batter between pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Cool: Let cakes cool completely before frosting.
  7. Make Frosting: Beat butter until fluffy. Add powdered sugar, vanilla, and coconut cream, mixing until smooth.
  8. Assemble: Level cake layers, spread frosting between layers, and cover the outside.
  9. Garnish: Top with toasted coconut flakes, fresh pineapple slices, or edible flowers for extra flair!
