Description

  • 1 tsp salt

Optional Add-ins & Toppings:

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Sauté onions and garlic until softened; add celery or carrots if using.
  3. Stir in flour to create a roux; cook 1–2 minutes.
  4. Gradually whisk in broth until smooth.
  5. Add diced potatoes, bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are tender.
  6. Mash or blend part of the soup for a thicker texture if desired.
  7. Stir in cream and optional cheese until smooth.
  8. Season with salt and pepper.
  9. Serve warm, topped with bacon, cheese, sour cream, or fresh herbs.

Notes

  • Yukon Gold or Russet potatoes work best for texture and flavor.
  • Simmer longer if using fresh herbs to deepen flavor.
