Instructions
- In a large pot, melt butter over medium heat.

- Add diced potatoes, bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are tender.
- Mash or blend part of the soup for a thicker texture if desired.
- Stir in cream and optional cheese until smooth.
- Season with salt and pepper.
