Description

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  3. Beat in eggs one at a time, then stir in pumpkin purée and vanilla extract.
  4. Gradually add flour, baking powder, salt, cinnamon, nutmeg, and cloves; mix until just combined (do not overmix).
  5. Fold in optional mix-ins like chocolate chips or nuts if desired.
  6. Spread batter evenly into prepared pan and smooth the top.
  7. Bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Cool completely before slicing into bars.

Notes

  • Use canned pumpkin purée, not pumpkin pie filling.
  • For extra chewiness, add an extra egg yolk or slightly underbake.
  • Vegan option: substitute flax eggs and plant-based butter.
  • Store in an airtight container at room temp for 3 days, in the fridge for 1 week, or freeze up to 3 months.
