Instructions
- Preheat oven to 400°F (204°C). Line a 12-cup muffin tin with paper liners or coat with cooking spray.
- In a large bowl, whisk eggs, sugar, pumpkin puree, and vegetable oil until smooth.
- Add flour, baking soda, baking powder, pumpkin pie spice, salt, and vanilla extract. Stir until just combined do not overmix.
- Gently fold in 1 cup chocolate chips.
- Divide batter evenly among muffin cups. Sprinkle remaining chocolate chips on top.
- Bake for 17–22 minutes, or until lightly browned and a toothpick inserted in the center comes out clean.
- Cool in pan for 5 minutes, then transfer muffins to a wire rack to cool completely.
