- 125 g unsalted butter, melted
- ½ cup brown sugar
- 1 large egg
- 1 ½ cups all-purpose flour
- 1 ½ cups rolled oats
- ½ teaspoon baking powder
- Pinch of salt
- 1 cup raspberry jam (or strawberry/blueberry)
Optional add-ins: chopped nuts, shredded coconut, or a sprinkle of cinnamon
Instructions
- Preheat oven to 200°C/400°F (180°C fan). Grease and line an 8-inch metal pan with parchment overhang.
- Mix melted butter and brown sugar until smooth. Add egg and combine.
- Stir in flour, oats, baking powder, and salt until incorporated.
- Press 1 ½ cups of mixture evenly into prepared pan.
- Spread raspberry jam evenly over base.
- Crumble remaining oat mixture on top.
- Bake 30–35 minutes until topping is golden.
- Cool completely in pan, then lift with parchment and cut into 16 squares.
Notes
- Use rolled oats (not quick or steel-cut) for best texture.
- For easier slicing, chill bars briefly after cooling.
- Vegan: swap butter for plant-based and egg for flax egg.
- Gluten-free: use certified gluten-free oats and flour.
- Store at room temperature for 3 days, fridge for 5 days, or freeze up to 3 months.
