Description

Raspberry jam oat bars feature a buttery oat base, sweet-tart raspberry jam filling, and a crumbly oat topping for a chewy, flavorful treat. Perfect for breakfast, snacks, or dessert, these bars are versatile, easy to make, and adaptable for gluten-free or vegan diets.


Ingredients

  • 125 g unsalted butter, melted
  • ½ cup brown sugar
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 ½ cups rolled oats
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 cup raspberry jam (or strawberry/blueberry)
    Optional add-ins: chopped nuts, shredded coconut, or a sprinkle of cinnamon

Instructions

  1. Preheat oven to 200°C/400°F (180°C fan). Grease and line an 8-inch metal pan with parchment overhang.
  2. Mix melted butter and brown sugar until smooth. Add egg and combine.
  3. Stir in flour, oats, baking powder, and salt until incorporated.
  4. Press 1 ½ cups of mixture evenly into prepared pan.
  5. Spread raspberry jam evenly over base.
  6. Crumble remaining oat mixture on top.
  7. Bake 30–35 minutes until topping is golden.
  8. Cool completely in pan, then lift with parchment and cut into 16 squares.

Notes

  • Use rolled oats (not quick or steel-cut) for best texture.
  • For easier slicing, chill bars briefly after cooling.
  • Vegan: swap butter for plant-based and egg for flax egg.
  • Gluten-free: use certified gluten-free oats and flour.
  • Store at room temperature for 3 days, fridge for 5 days, or freeze up to 3 months.
