Description

Raspberry Neapolitan cookies combine soft sugar cookies with tangy raspberry jam and rich chocolate layers. These nostalgic, vibrant treats are perfect for holidays, parties, or gifting, offering a chewy texture and indulgent flavor in every bite.

Ingredients

Scale

Base Dough:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt

Raspberry Layer:

  • ½ cup raspberry jam (store-bought or homemade)

Chocolate Layer:

  • 1 cup dark chocolate chips or melted chocolate

Optional Add-ins:

  • Powdered sugar (for dusting)
  • Sprinkles (for decoration)
  • Chopped nuts (for crunch)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. Gradually add flour, baking powder, and salt. Mix until a soft dough forms.
  5. Divide dough into 3 equal portions:
    • Leave one plain.
    • Mix raspberry jam into the second.
    • Fold melted chocolate into the third.
  6. Roll small portions of each dough into balls. Stack one of each flavor together and gently flatten.
  7. Place on prepared baking sheets.
  8. Bake for 8–10 minutes until edges are lightly golden.
  9. Cool on baking sheet for a few minutes, then transfer to a wire rack.

Notes

  • Chill dough for 30 minutes to prevent spreading.
  • Use high-quality jam and chocolate for the best flavor.
  • Store in an airtight container for up to 4 days, or freeze for up to 3 months.
