- 1–1.5 pounds carrots (organic or heirloom preferred)
- 2 tsp olive oil
- 1–2 tablespoons za’atar
- 1 teaspoon sumac
- 1 tablespoon honey
Whipped Feta
- 8 ounces feta cheese (in brine)
- 1/2 cup Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 2 garlic cloves, minced

- Fresh parsley
- Pomegranate arils
Instructions
Roasting the Carrots
- Preheat oven to 400°F (200°C).
- Wash and scrub the carrots; peel if desired. Trim tops, leaving a small stem intact.
- Slice carrots diagonally into 1/4-inch thick pieces (if using larger carrots).
- Toss carrots in a large bowl with olive oil, za’atar, sumac, honey, salt, and black pepper.
- Spread seasoned carrots on a parchment-lined baking sheet in a single layer.
- Roast for 20–25 minutes, flipping halfway through, until fork-tender and caramelized. Optionally, broil for 1–2 minutes for extra char.
Making the Whipped Feta
- Combine feta cheese, Greek yogurt, lemon juice, lemon zest, and garlic in a food processor.
- Blend until smooth and creamy, scraping down sides as needed.
Assembling the Dish
- Spread whipped feta on a serving platter as a base.
- Arrange roasted carrots on top of the feta.
- Garnish with parsley and pomegranate arils. Drizzle with olive oil if desired.
Notes
- Whipped feta can be prepared up to 3 days ahead and stored in an airtight container in the fridge.
- Leftover roasted carrots can be refrigerated for 3–5 days in an airtight container. Reheat in an oven or microwave.
Experiment with seasoning variations like chili flakes, dill, or hot honey for a personalized touch.
