Description

This tropical-inspired dessert features rum-soaked pineapple rings coated in a crispy coconut crust and deep-fried to golden perfection. Infused with rich caramelized flavors, this indulgent treat pairs perfectly with a rum glaze or vanilla ice cream.

Instructions

  1. Soak the Pineapple: Place pineapple rings in a bowl and pour the rum over them. Let them soak for at least 30 minutes or overnight for a deeper flavor.
  2. Prepare Coating Stations: In three separate bowls, place flour in one, beaten eggs in another, and a mixture of shredded coconut, panko breadcrumbs, cornstarch, and cinnamon in the third.
  3. Coat the Pineapple Rings: Dredge each rum-soaked pineapple ring in flour, then dip into the egg wash, and finally coat with the coconut mixture.
  4. Heat Oil for Frying: Heat oil in a pan to 350°F (175°C).
  5. Fry Until Golden Brown: Carefully place coated pineapple rings into the hot oil and fry for about 2-3 minutes per side, or until crispy and golden brown. Remove and drain on paper towels.
