  • pounds Kielbasa or smoked sausage, sliced into ¼-inch pieces
  • 2 pounds baby creamer potatoes, halved
  • 2 (15 oz) cans green beans, drained
  • ⅛ cup vegetable oil
  • ¼ cup butter
  • 1 cup finely chopped onions
  • 3 cloves garlic, minced
  • 1 teaspoon Slap Ya Mama® seasoning (or Cajun seasoning substitute)
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • ¼ cup water
  • (Optional) Plant-based sausage and dairy-free butter for vegan version

Instructions

  1. Preheat oven to 400°F (204°C) and grease a 9×13-inch baking dish with non-stick spray.
  2. Wash and halve the baby potatoes; place them in a large sealable bag.
  3. Add vegetable oil, Slap Ya Mama® seasoning, black pepper, and red pepper flakes. Seal and shake well to coat evenly.
  4. In a large frying pan, cook the sliced sausage with ¼ cup of water over medium-high heat until browned and most of the water evaporates. Set aside.
  5. In the same pan, melt butter and sauté onions and minced garlic until translucent and fragrant. Remove from heat and let cool slightly.
  6. Add the cooked sausage, onion-garlic mixture, and drained green beans to the bag with seasoned potatoes. Seal and shake to mix.
  7. Transfer all contents to the prepared baking dish and cover with foil.
  8. Bake for 40 minutes, or until potatoes are tender.
  9. Remove from oven and serve warm. Enjoy your comforting, flavorful casserole
