Description

Slow cooker pizza chicken features tender chicken breasts stuffed with a cheesy Italian blend, topped with marinara, pepperoni, and mozzarella delivering all the bold flavors of pizza in a hands-off, one-pot meal. Naturally gluten-free and easily made low-carb.


Ingredients

For the Cheese Filling:

– 2 cups shredded mozzarella cheese, divided

– ½ cup grated Parmesan cheese

– 1 large egg

– 1 teaspoon onion powder

– 1 teaspoon garlic powder

– 1 teaspoon Italian seasoning

For the Main Dish:

– 2 lbs boneless, skinless chicken breasts

– 1 medium green bell pepper, sliced

– 24 oz (3 cups) marinara sauce

– 6 oz pepperoni slices


Instructions

  1. In a medium bowl, combine 1 cup mozzarella, Parmesan, egg, onion powder, garlic powder, and Italian seasoning. Mix until well blended.
  2. Slice a pocket into the side of each chicken breast (do not cut all the way through).
  3. Divide cheese mixture evenly among chicken breasts, stuffing ¼ into each pocket.
  4. Place stuffed chicken breasts in a 6-quart slow cooker. Top each with sliced green pepper.
  5. Pour marinara sauce evenly over the chicken.
  6. Sprinkle remaining 1 cup mozzarella on top, then arrange pepperoni slices over the cheese.
  7. Cover and cook on HIGH for 2½–3 hours or LOW for 4–5 hours, until chicken reaches 165°F and is tender.
  8. Serve as-is or over pasta, rice, or zucchini noodles.

Notes

– Use freshly shredded mozzarella for better melting and creamier texture.

– Don’t overstuff the chicken—excess filling may leak out during cooking.

– Gluten-free: Naturally GF; just verify marinara and pepperoni labels if needed.
