Description

Smoked fajita chicken features tender chicken breasts marinated in a smoky, zesty blend of spices and slow-cooked to perfection. Perfect for weeknight dinners, backyard gatherings, or as a homemade treat. Easily made gluten-free, low-carb, or vegan.


Ingredients

For the Marinade:

– 2 tbsp olive oil

– 2 tbsp lime juice

– 1 tbsp apple cider vinegar

– 3 cloves garlic, minced

– 1 tsp ground cumin

– 1 tsp smoked paprika (substitute regular paprika if needed)

– 1 tsp chili powder

– ½ tsp onion powder

– ½ tsp dried oregano

– ½ tsp salt

– ¼ tsp black pepper

For the Chicken:

– 4 boneless, skinless chicken breasts (substitute thighs, turkey, or tofu for variety)


Instructions

  1. In a medium bowl, whisk together olive oil, lime juice, vinegar, garlic, cumin, smoked paprika, chili powder, onion powder, oregano, salt, and pepper until well combined.
  2. Place chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, coating each piece evenly. Seal and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat your smoker to 250°F. Add wood chips (mesquite or hickory recommended) to the smoker tray or box. If using a grill, set it up for indirect heat with wood chips in a foil packet.
  4. Remove chicken from the marinade and pat dry with paper towels. Place chicken directly on the smoker grates. Close the lid and smoke for 1–1.5 hours, or until the internal temperature reaches 165°F.
  5. Remove chicken from the smoker and let rest for 10 minutes on a cutting board. Slice thinly across the grain. Serve immediately in tortillas with grilled vegetables or over rice bowls with your favorite toppings.

Notes

– Use fresh spices for maximum flavor and aroma. Substitute plant-based alternatives for vegan diets.

– Store leftover chicken in an airtight container in the fridge for up to 3 days. Freeze for longer storage; thaw overnight in the fridge before reheating. Avoid microwaving if possible.
