S’mores cookie bars are a gooey, chocolatey twist on the classic campfire treat featuring a buttery cookie base, melted chocolate, and toasted marshmallows perfect for parties, potlucks, or anytime indulgence.

- ½ cup softened butter
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips (or melted dark chocolate)
- Mini marshmallows (enough to cover surface)
- Optional: crushed graham crackers, melted chocolate drizzle, sprinkles
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine flour, softened butter, granulated sugar, brown sugar, egg, and vanilla extract.
- Mix until smooth and press dough evenly into a lined 8×8 or 9×13 inch baking pan.
- Bake for 15–20 minutes until the cookie base is golden.
- Immediately sprinkle chocolate chips over the warm base or spread melted chocolate evenly.
- Top with a layer of mini marshmallows.
- Broil for 1–2 minutes, watching closely, until marshmallows are golden and gooey.
- Cool completely before slicing into squares.

- Freeze baked or unbaked bars for up to 3 months.
- Substitute gluten-free flour and vegan marshmallows if needed.
