Description

  • 1 cup fresh spinach, cooked and drained

  • 1 tsp fresh mint, chopped (optional)
  • 1 tbsp olive oil (for binding)

Instructions

  1. Prepare Chicken: Pat chicken breasts dry. Use a sharp knife to carefully loosen the skin of the chicken breasts, creating space for the stuffing.
  2. Make the Stuffing: In a mixing bowl, combine the cooked spinach, crumbled feta, minced garlic, chopped herbs, olive oil, salt, and pepper. Stir until well-mixed.
  3. Stuff the Chicken: Gently slide the stuffing under the loosened skin of the chicken breasts. Be cautious not to overstuff.
  4. Secure Chicken: Tie the chicken with kitchen twine to keep its shape and prevent stuffing from spilling out. Brush with melted butter or olive oil.
  5. Cook: Preheat oven to 400°F (200°C). Roast for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  6. Serve: Slice and serve with your choice of side dishes.
