Description

This homemade strawberry shortcake features sweet, juicy strawberries layered over fluffy, tender biscuits and topped with creamy whipped cream. Perfect for summer gatherings, potlucks, or special celebrations, it’s a light yet indulgent dessert that’s easy to customize and sure to impress.

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ cup cold, cubed butter
  • ¾ cup cold buttermilk
  • Melted butter for brushing

For the Strawberries:

  • to 2 cups fresh strawberries, sliced
  • 12 tablespoons sugar (optional, for macerating)

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Make the biscuit dough: In a mixing bowl, combine flour, baking powder, sugar, and salt.
  3. Cut in cold cubed butter with a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  4. Add cold buttermilk and stir gently until a soft dough forms.
  5. On a floured surface, fold the dough 2–3 times to create layers.
  6. Pat the dough out and cut biscuits using a round cutter. Place them on the baking sheet.
  7. Brush tops with melted butter and bake for 12–15 minutes until golden.
  8. While biscuits bake, macerate the strawberries (optional): toss sliced strawberries with sugar and set aside.
  9. Make whipped cream: Chill mixing bowl and beaters. Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  10. Assemble shortcakes: Slice biscuits, layer with strawberries and whipped cream. Serve immediately.

Notes

  • Use gluten-free flour for a GF version.
  • For a vegan option, use coconut oil and coconut cream.
  • Do not overmix the dough to keep biscuits light and fluffy.
  • Assemble just before serving to keep biscuits from becoming soggy.
