Description

Strawberry sorbet is a vibrant, dairy-free frozen treat made with just fruit, sugar, and water. Naturally refreshing, low-fat, and bursting with flavor, this healthy dessert is perfect for warm days or anytime you’re craving something sweet yet light.


Ingredients

Scale
  • 4 cups ripe strawberries, hulled and chopped
  • ½ to ¾ cup sugar (or honey, agave syrup, or stevia to taste)
  • ¼ cup water
  • 1 tbsp lemon juice
  • Optional: mint leaves, vanilla extract, or balsamic glaze for extra flavor

Instructions

  1. Wash, hull, and chop strawberries. If using frozen berries, thaw slightly.
  2. In a blender, combine strawberries, sweetener, water, and lemon juice. Blend until smooth.
  3. Taste and adjust sweetness or acidity as needed.
  4. Churn method: Pour mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. No-churn method: Pour mixture into a shallow container. Freeze for 4 hours, stirring every 30 minutes to break up ice crystals.
  6. Transfer to an airtight container and freeze until firm.
  7. Let sit at room temp for a few minutes before scooping. Serve with fresh mint, shortbread cookies, or on its own.

Notes

  • For a boozy version, add 1–2 tbsp of rosé, champagne, or vodka before freezing.
  • To reduce calories, use stevia or a smaller amount of natural sweeteners.
  • Store in an airtight container for up to 2 weeks.
