Instructions
- Heat 1 tablespoon olive oil in a Dutch oven over medium heat.
- Add diced onion and cook for 4–5 minutes until softened.
- Stir in garlic, oregano, chili powder, and cumin. Cook 1 minute to bloom flavors.
- Pour in chicken broth and bring to a gentle simmer.
- In a separate skillet, heat remaining olive oil over medium-high heat. Add corn and cook until lightly charred (about 5 minutes).
- Add beans, shredded chicken, and charred corn to the simmering broth.
- In a small bowl, whisk together cornstarch and cold water, then stir into the chili. Simmer 8–10 minutes until slightly thickened.
- Reduce heat to low. Stir in sour cream, shredded cheese, and lime juice until smooth.
- Season with salt and pepper.
- Ladle into bowls and top with queso fresco, jalapeño, cilantro, or tortilla strips.
