- 1 cup granulated sugar

- Prepare crust: Roll out the bottom half of the double crust into a 12-inch circle and place it into a 9-inch pie dish. Chill while preparing the filling.
- Make filling: In a medium saucepan over medium heat, melt butter, then whisk in flour and simmer for 1 minute. Add water and sugar, bring to a boil, then reduce heat and simmer for 3 minutes. Remove from heat.
- Add apples: In a large bowl, toss sliced apples with cinnamon. Pour the warm sauce over the apples and mix to coat evenly.
- Assemble pie: Fill the chilled crust with the apple mixture, mounding slightly in the center.
- Add lattice top: Roll out the second crust and cut into strips. Weave into a lattice pattern over the filling. Brush with egg wash (1 egg + 1 tbsp water).
- Bake: Place the pie on the center rack of a preheated 425°F (220°C) oven and bake for 15 minutes. Reduce heat to 350°F (175°C) and continue baking for 45 minutes, or until golden brown and bubbly.
- Cool: Let pie cool at room temperature for at least 1 hour before serving.
