Description
Cloud bread is a soft, airy bread alternative made from whipped egg whites, cream cheese, and seasonings. Perfect for low-carb or keto diets, breakfast, sandwiches, or as a homemade snack. Easily made gluten-free, dairy-free, or vegan.
Ingredients
For the Bread:
– 4 large eggs (separated)
– ½ tsp cream of tartar (substitute lemon juice or white vinegar if needed)
– 2 oz low-fat cream cheese (substitute full-fat or dairy-free cream cheese if preferred)
– 1 tsp Italian herb seasoning (substitute everything bagel seasoning, cinnamon sugar, or curry powder for variety)
– ½ tsp sea salt (reduce or omit for low-sodium diets)
– ¼–½ tsp garlic powder
Optional Mix-Ins:
– Red pepper flakes
– Smoked paprika
– Grated Parmesan cheese
– Chopped herbs or seeds
Instructions
- Preheat oven to 300°F (150°C) and set on convection if available. Line two large baking sheets with parchment paper.
- In a stand mixer with a whip attachment, beat egg whites and cream of tartar on high speed until stiff meringue peaks form. Transfer to a separate bowl.
- Place cream cheese in the empty stand mixing bowl and beat on high to soften. Add egg yolks one at a time, scraping the bowl after each addition. Beat until smooth, then mix in Italian seasoning, salt, and garlic powder.
- Gently fold the meringue into the yolk mixture, being careful not to deflate the foam.
- Spoon ¼-cup portions of the foam onto the prepared baking sheets, spreading into even 4-inch circles about ¾ inch high. Leave space between each circle.
- Bake on convection for 15–18 minutes or in a conventional oven for up to 30 minutes. The bread should be golden on the outside and firm, with no jiggling in the center.
- Cool for several minutes before serving.
Notes
– Use room-temperature eggs: This ensures optimal whipping. Avoid overmixing when folding the meringue to maintain its airy texture.
– Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Freeze portions for longer storage; reheat in the oven at 300°F (150°C) for 5–10 minutes to restore texture. Avoid microwaving if possible.
– Customizations: Add grated cheese, chopped herbs, or seeds for variety. Swap seasonings like red pepper flakes or smoked paprika for unique twists.
