Description

A rich, savory gravy made from turkey drippings, flour, and stock. Smooth, deeply flavorful, and easy to prepare, it’s the perfect complement to holiday meals and roasted poultry dishes.


Ingredients

  • ⅓ cup turkey fat skimmed from drippings (or butter)
  • ⅓ cup all-purpose flour
  • 12 cups dark turkey juices
  • 34 cups warm chicken stock (enough to total 4 cups combined liquid)
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 teaspoon fresh rosemary or thyme
  • Optional: 1 tablespoon dry sherry or white wine
  • Optional dietary swaps: gluten-free flour, vegetable broth, olive oil, omit alcohol

Instructions

  1. After roasting the turkey, pour pan drippings into a heatproof measuring cup or fat separator.
  2. Skim off most of the fat and measure the dark juices (1–2 cups).
  3. Add warm chicken stock to reach a total of 4 cups combined liquid.
  4. In a skillet or saucepan over medium heat, melt ⅓ cup turkey fat or butter.
  5. Sprinkle in the flour and whisk constantly for 3–4 minutes until lightly golden and nutty.
  6. Slowly whisk in about 3 cups of the liquid, a little at a time, whisking out any lumps.
  7. Add more liquid as needed to reach your desired thickness.
  8. Stir in the optional sherry or white wine and simmer for 2–3 minutes.
  9. Taste and season with salt and pepper.
  10. Strain through a fine-mesh strainer if desired.
  11. Serve warm.

Notes

  • Whisk continuously to avoid lumps.
  • For vegetarian gravy: use olive oil + vegetable broth.
  • For gluten-free gravy: use gluten-free flour or cornstarch.
  • For low-sodium: use low-sodium stock and reduce salt.
  • Add variations: smoked paprika, garlic powder, sage, caramelized onions, mushrooms, or cream.
  • Storage: refrigerate up to 3 days or freeze up to 3 months. Reheat gently while whisking.
