Ingredients
– 2 tablespoons butter
– 1 small yellow onion, diced
– 2 celery ribs, diced
– 1 cup carrots, diced
– 3 cloves garlic, minced
– 8 cups chicken broth (or turkey broth/stock)
– 1 bay leaf
– 3 cups diced or shredded leftover turkey
– 1 cup uncooked bowtie pasta (or alternatives like rice, tortellini, or potatoes)
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1 teaspoon dried parsley
– 1 teaspoon mustard powder
– ¼ teaspoon ground sage
– ¼ teaspoon black pepper
– 1 teaspoon Worcestershire sauce
– 1 teaspoon hot sauce
– Optional: Parmesan rind or turkey bones for added depth
– Optional garnish: Parmesan cheese or fresh herbs
Instructions
- Melt butter in a large soup pot over medium heat. Add onions, carrots, and celery; soften for 5 minutes.
- Stir in garlic, Worcestershire sauce, hot sauce, bay leaf, and seasonings (basil, oregano, parsley, mustard powder, sage, and black pepper).
- Pour in chicken broth and bring to a boil. Reduce heat to a simmer and add diced turkey. Let simmer gently, uncovered, for 15 minutes.
- While the soup simmers, cook pasta separately until al dente. Drain and set aside. Avoid adding pasta directly to the soup pot to prevent mushiness during storage.
- To serve, add cooked pasta to bowls and ladle the soup on top. Garnish with Parmesan cheese or fresh herbs if desired.
Notes
– Use homemade turkey stock for richer flavor.
– Store pasta separately from the soup to maintain texture.
– For a low-carb option, replace pasta with cauliflower rice or zucchini noodles.
– Vegan alternative: Swap turkey with plant-based protein, use vegetable broth, and omit butter or replace it with olive oil.
