Description

A comforting and hearty turkey soup made with leftover turkey, vibrant vegetables, and a rich broth infused with herbs and spices. Perfect for post-holiday meals or cozy dinners, this recipe is versatile, easy to prepare, and packed with flavor.


Ingredients

– 2 tablespoons butter

– 1 small yellow onion, diced

– 2 celery ribs, diced

– 1 cup carrots, diced

– 3 cloves garlic, minced

– 8 cups chicken broth (or turkey broth/stock)

– 1 bay leaf

– 3 cups diced or shredded leftover turkey

– 1 cup uncooked bowtie pasta (or alternatives like rice, tortellini, or potatoes)

– 1 teaspoon dried basil

– 1 teaspoon dried oregano

– 1 teaspoon dried parsley

– 1 teaspoon mustard powder

– ¼ teaspoon ground sage

– ¼ teaspoon black pepper

– 1 teaspoon Worcestershire sauce

– 1 teaspoon hot sauce

– Optional: Parmesan rind or turkey bones for added depth

– Optional garnish: Parmesan cheese or fresh herbs


Instructions

  1. Melt butter in a large soup pot over medium heat. Add onions, carrots, and celery; soften for 5 minutes.
  2. Stir in garlic, Worcestershire sauce, hot sauce, bay leaf, and seasonings (basil, oregano, parsley, mustard powder, sage, and black pepper).
  3. Pour in chicken broth and bring to a boil. Reduce heat to a simmer and add diced turkey. Let simmer gently, uncovered, for 15 minutes.
  4. While the soup simmers, cook pasta separately until al dente. Drain and set aside. Avoid adding pasta directly to the soup pot to prevent mushiness during storage.
  5. To serve, add cooked pasta to bowls and ladle the soup on top. Garnish with Parmesan cheese or fresh herbs if desired.
