Instructions

  5. Stir in taco seasoning and cook 7–10 minutes until fully browned.
  6. In a blender, combine cottage cheese, shredded cheese, and taco seasoning; blend until smooth. Warm gently.
  7. Assemble bowls: divide sweet potatoes, top with ground beef, then spoon over cottage cheese queso.
  8. Add toppings like hot honey, pico de gallo, or guacamole. Serve immediately.
